It’s February–which means Galentine’s Day is right around the corner. What’s Galentine’s Day, you ask?
Well, it’s only the best day of the year. Every February 13th, my lady friends and I leave our husbands and our boyfriends at home, and we just come and kick it, breakfast-style. Ladies celebrating ladies. It’s like Lilith Fair, minus the angst. Plus frittatas.
Or at least, according to Leslie Knope that’s what it is. For me and my gals, Galentine’s Day looks like a table filled with snacks and sweets and a good romantic comedy playing on the TV. If that sounds like the Galentine’s for you, read on!
Since the husband is away, I decided it would be fun to invite a few of my FRG gals to my house for a double showing of my favorite romantic comedies– 27 Dresses and Bride Wars. My college best friend and I would watch both of these while we talked to each other on the phone and, to this day, watching those movies bring back so many fun memories.
So when I decided to host a Galentine’s Day party for my FRG ladies, I knew exactly where to take my inspiration. With 27 Dresses in mind, I created a cute little dress invitation to send to my gals pals. This would have made a pretty cute bridesmaid dress if you ask me!
For my party snacks, I chose an assortment of sweet and salty treats. And to add a little extra pizzazz, I created a few snack-themed puns to stick to my snacks. (How cute is ‘I value our friend-chip’).
I also made a batch of my favorite M&M cookies. All my gal pals are fans of chocolate and these cookies are loaded with them! Milk chocolate and white chocolate plus extra M&M’s. You’d think that would be too much but it’s pretty delicious!
- 2 cups flour
- 1/2 tsp baking soda
- 13 Tbsp butter melted + cooled
- 1/2 cup granulated sugar
- 3/4 cup brown sugar firmly packed
- 1 tsp salt
- 2 tsp vanilla
- 1 egg
- 1 egg yolk
- 1 cup milk chocolate chips
- 1 cup white chocolate chips
- 1/2 cup M&Ms + extra
Melt butter in a microwaveable bowl and set aside to cool. Preheat oven to 375 degrees and line a baking sheet with parchment paper.
In a medium bowl, whisk together flour and baking soda.
In a large bowl, combine butter, both sugars, vanilla, and salt. Beat with stand or handheld mixer until well combined.
Add egg and egg yolk. Scrape down sides of bowl as necessary.
Add in flour mixture and continue mixing until the batter is incorporated. Mix in chocolate chips and M&Ms and gently stir.
Using a large spoon or ice cream scoop, measure out 2 tablespoonfuls of cookie dough into balls and place on cookie sheet about 2 inches apart. Top each cookie dough ball with additional M&Ms.
Bake for 8 to 9 minutes until the edges are just lightly browned. Cookies will look slightly underdone but the cookie will continue to bake as it cools.
Allow cookies to cool completely before moving.
I actually think this would look even more festive with pink M&Ms but I picked up the wrong bag at the story (oops!). Still, I think they came out amazing….and super cute.
